Sweet Potato Avo Toast


  • 1 large sweet potato

  • Olive oil, to drizzle

  • Bocconcini, torn (optional)

  • Sea salt flakes

Avo Topping:

  • 1 avocado

  • Juice 1 lime

  • Big handful mint leaves

  • Handful dill

  • 2 tbsp chives, chopped

  • 1/2 tbsp rice vinegar

  • 1/2 tbsp honey

  • 1/4 cup nutritional yeast (optional)

  • 1/2 tbsp sriracha (optional)

  • Salt, to taste


Preheat oven to 200C. Cut sweet potato, lengthways into slices ~1.5cm thick. Place on tray lined with baking paper, drizzle with oil and bake for ~40 mins or until tender. Meanwhile, blend all avo topping ingredients in a food processor until smooth. Spread over the sweet potato slices, top with torn bocconcini, sea salt and an extra drizzle of olive oil.
