Peanut Butter Crunch Balls


  • 1/2 cup smooth peanut butter

  • 1/3 cup pure maple syrup

  • 1/4 cup peanuts, crushed

  • 6 rice cakes, finely crushed

  • Pinch salt

  • 80g chocolate, melted mixed with 1 tsp coconut oil

  • Sea salt flakes, to sprinkle


Add peanut butter, maple syrup, peanuts and rice cakes to a bowl - mix until well combined. If the mixture feels too sticky, add another rice cake or 2. Roll into balls and place on a tray lined with baking paper. Dip each ball into the melted chocolate mixture and sprinkle with salt. Place in freezer or fridge until the chocolate is set.
