Honey Parmesan Sweet Potato Wedges
Ingredients:
2 medium sweet potatoes, sliced into wedges
2 eggs, lightly beaten
1/3 cup parsley, finely chopped
1 cup grated parmesan
1 tsp paprika
1/2 tsp chilli flakes (optional)
Salt, to season
Oil spray
Honey, to drizzle
Olive oil, to drizzle
2 tbsp chives, finely chopped
Instructions:
Preheat oven to 220C. Place beaten eggs in a medium bowl. In a separate bowl, mix together parsley, parmesan, paprika, chilli flakes and salt. Dip each wedge in egg mixture, followed by the parmesan mixture. Tap off excess and place on a tray lined with baking paper. Repeat with remaining wedges, arranging them on a single layer. Bake for ~30 mins, turning the wedges halfway. Top with a drizzle of honey, drizzle of olive oil, sea salt flakes and chives.
Serves 4 as a side or snack.
