Easy Ceviche
Ingredients:
1 fillet sashimi grade salmon, sliced into cubes
1 lebanese cucumber, cut into small cubes
¼ cup coriander, finely chopped
1 mango, cut into small cubes
¼ cup fresh lime juice
Sea salt, to taste
Instructions:
In a medium bowl, place the salmon, cucumber, coriander and mango. Mix well. Pour over lime juice, sprinkle over salt and stir again to combine.
Serves 4, as a starter.
